The Colonist Sparkling Wine Cocktail

The British, Spanish, French and Portuguese all fought over the Newfoundland of America, all the way from Canada down to Argentina, they fought long and hard in the ocean and on foreign lands, but one such fight took place in Jamaica in 1655, at the time, under Spanish rule, the British decided to take Jamaica to combat the ever growing Spanish America,
As the British and Spanish are the center point of this story, I decided to put both in this Cocktail, the Sparkling Wine will come from Spain and the Rum from England, as two countries once at war, now at peace, we’ll see whether they will work together in the glass or clash.
The Sparkling Wine
A Cava, from Spain, this bottle of Anna Codorníu Pinot Noir is perfect for our Cocktail.
A winery with more than 500 years of history, the first record of winemaking in Codorníu was dated in 1551.
In 1872 Josep Raventós became the pioneer and creator of cava producing the first sparkling wine bottles in Spain using the traditional method.
In 1959, Codorníu launches its first television commercial, this is just a selection of the history Codorníu holds, you can see the rest of their wonderful history right here.

Aroma – “Green apples and pears on the aroma.”
Flavour – “Green fruit flavours with a creamy end.”
The Rum
This Rum is made in England by Black Bottle Distillery, we’ve previously tasted their Oxford Gin and their Lord Randolph Oxford Whisky, and now it’s time to taste their Oxford Dark Rum.

Aroma – “A combination of creamy pineapple and pear with a Rum hint on the aroma.”
Flavour – “Creamy Pineapple with an underlying pear flavour, accompanied by a light Bubbly sensation and a soft Rum finish, the Cava wraps itself around the Rum giving it a caramel flavour.”
