Mince Pies first originated from England during the 13th century, back when they were first made, they were known as Christmas pies, mutton pies or shrid pies. they used to be made with pastry, meats, dried fruits and spices, like cinnamon, nutmeg and cloves, these ingredients were brought back from the Middle East by European crusaders, nowadays, they’ve removed the meat, most Mince Pies sold today are vegetarian friendly, but it is still worth checking the packaging as some will have meat in the suet.

The Mince Pie has been enjoyed around Christmas for a long time, and as it has been enjoyed around Christmas the Pie began to be associated with Catholicism/Christianity, so during the English Civil War, the Puritan authorities frowned on them. But that didn’t put an end to the Pie, they continued to be eaten around Christmas through the Victorian era and is still very much enjoyed to this day.

Mince Pie Pairing

I decided to go with 12 small mince pies, the perfect size to go with a spread of different Christmas treats and very easy to enjoy for those who don’t have the biggest sweet tooth.

Pairing Notes: “A fizzy red berry wave comes over the mince pie, it’s strong at first then soaks into the mince pie leaving a touch of red berry mince pie.”

The festive mince pie is given a Christmas red berry addition, making it an even more Christmassy treat, a festive combination.

Whisky – Compass Box

Compass Box was founded by John Glaser, while working at a large UK distiller in 2000, he came to the conclusion that there was so much that hadn’t yet been explored in the world of Scotch Whisky. He started Compass Box in his kitchen, where it grew over the years and now he has two dedicated Blending Rooms in London.

You can also find on their website a collection of videos of the Founder & Whiskymaker John Glaser, where he explores surprising truths and misconceptions about Scotch whisky, teaching you a few things about Whisky and the way to enjoy it, it’s called the Whisky School.

The Sweet Sparkling Wines

Heinz Theodor Schroeder settled down in Patagonia in 1927 and began working in the wine industry, their winery and vineyards are located in San Patricio del Chañar, Patagonia at the heart of the southernmost wine region of Argentina. Chief enologist Leonardo Puppato helped in the technical design of the winery and also conducts the winemaking practices.

During the construction of the winery’s building, fossilized bones of a large herbivorous dinosaur were discovered. This became a massive part of Familia Schroeder, with them specially designing a cellar house to showcase the original bones in the exact place they were discovered. After several years of study, the paleontologists concluded that the fossils belonged to a new species, so the dinosaur received a new name: Panamericansaurus Schroederi, in recognition of the family contribution to the excavation works.

Age: 75 million years (Campanian – Maastrichtian). Late Cretaceous.
Systematics: Sauropoda. Titanosauridae.
Environment: Coastal plain of shallow seas.
Length: 10 to 12 meters.

Wow, what a treat, defiantly in the right category, there are many sweet Sparkling Wines available to buy, but not that many produced in England.

Kent’s original vineyard, the Barnes family has owned and managed Biddenden Vineyards since 1969, but vines weren’t the first things planted there, there were originally over 40 acres of apple orchard, but in the late 60’s apple prices began to decline, and in 1969, they decided to turn 1/3 of their acres into vines, that’s when Biddenden Vineyards was born.

They currently have 12 different grape varieties planted over 23 acres of south-facing slopes. It’s interesting to know that their first wine was bottled in 1973, it would be amazing if you have that bottle safely stored somewhere, today they produce around 80,000 bottles per year, the vineyard is currently being run by the second & third generations of the Barnes family.

How much do you know about your local supermarket? Here’s a little bit about Aldi you might not have known: Aldi was founded in 1946 in the city of Essen in Germany, it was created by two brothers Karl and Theo Albrecht, as of today there are now over 11,000 stores spread across 20 different countries. Aldi are going to invest over £1.3 billion by 2023 with the goal to open 100 new stores by 2023. Over 900 of their stores are in the UK.

Most of us love a good drink over the holiday’s, whether it be some bubbly, gin, rum, whiskey, or eggnog, but what about some cocktails, with it being the Christmas season, now is the perfect time to create some Christmas Fizz Cocktails, so let’s look at Aldi’s selection. When I say that Aldi has a great selection of spirits and liqueurs to choose from this Christmas, I seriously mean it, just take a look at their Gin section. They have so many craft gins which would be a delight to enjoy over Christmas, like Spiced Plum and Clementine, Mulled Berry and Cranberry and Spiced Biscuit to name a few.

As many of us have different tastes, I’ve got here a Gin, Rum and Whiskey, I’ve picked a bottle of Prosecco and created 3 different unique Christmas Cocktails using Aldi’s Gin, Rum and Whisky,  if any of them appeal to you, you’ll be able to enjoy them over Christmas.

Montelvini

Montelvini has been around for 135 years, owned by the Serena family, the current owner, Armando Serena has been President of Montelvini since 1968, located in a small region in Montello in Italy, the Serena family has dedicated themselves to producing wine with skill and passion.

Montelvini – Serenitatis Asolo Prosecco Superiore Extra Brut Millesimato 2020 – Tasting Notes

Aroma 👃 “Lively floral, chalky apricot, honeysuckle, garden herbs and light green pear on the aroma.”

Flavour 👅 “A very pleasant combination of dry flavours, including green apple, green pear, white floral and chalky citrus.”

The Gin – Spiced Plum and Clementine

Gin Tasting Notes: “A wonderful expression of clementine, it brings to mind the orange aroma from Terry’s Chocolate Orange. I also get Christmas greenery, like Holly and Christmas tree.
A perfectly crafted fusion of plum and clementine, it’s sweet from what tastes like the ripeness of the fruits picked at the absolutely perfect time, perfectly balanced.”

Gin Fizz Cocktail: “Initially greeted with fresh plum then followed by clementine on the aroma. Plum and Clementine, with chalky citrus and white floral on the palate.”

How To Make The Christmas Plum Cocktail

  1. Pour in 15mls of Spiced Plum and Clementine Gin.
  2. Top up with 100mls of Sparkling Wine.
  3. Place in an Orange Slice.
  4. Chop up half a Plum and place it into your glass for the final garnish.

The Whisky – Highland Black – 8 Years Old

Whisky Tasting Notes: “Cinnamon, toffee and cooked banana on the aroma. Oaky Wood, malt, dark chocolate, fudge, vanilla and sticky toffee pudding flavours.”

Whisky Fizz Cocktail: “Toasty lemon aromas. A creamy citrus driven cocktail, with an undertone of malt, dark chocolate and fudge from the Whiskey.”

How To Make The Rocky Highlands Cocktail

  1. Fill your glass with Ice Cubes.
  2. Pour in 25mls of Highland Black Whiskey.
  3. Top up with 100mls of Sparkling Wine.
  4. Add in a Lemon Wheel to finish.

The Rum – Old Hopking – Spiced Gold

Rum Tasting Notes: “Smooth and creamy banana and Caribbean spice, banana spice cake with whipped cream on top on the aroma. A smooth creamy vanilla and Caribbean spice, a wonderful balance of a younger and vibrant and old and elegant Rum, it’s warming and smooth, a fantastic experience for the price.”

Rum Cocktail: “Moroccan Almond, almond cake on the aroma. A drying taste of almond, hints of Caribbean spice, paired with chalky and white floral from the Sparkling Wine on the palate.”

How To Make The Almond Voyage Cocktail

  1. Pour in 20mls of your Old Hopking Rum.
  2. Place 2 drops of Moroccan Almond into your glass.
  3. Top up with 100mls of Sparkling Wine.

They claim it’s ‘the most festive bottle you will ever see!” and I’m inclined to agree with them, a fantastic Christmas bottle design, it won’t look out of place this December, that’s for sure. it’s available from Harvey Nichols for only £25. You get a 50cl bottle of Gin Liqueur in a Half a Sixpence display box, even containing a brief history of the pudding on the side of the box. It’s also Vegan friendly and contains no nuts or dairy.

The Gin Liqueur contains warming flavours of Christmas spices, including cinnamon with mince pie, Christmas cake, dried fruit like raisins and prunes overlaid with icing sugar, toffee and syrup on the aroma. A syrupy sweetness, combined with dried fruits, gives you a liquefied Christmas pudding on the palate. Although you can’t see it clearly in the bottle, there’s also a golden shimmer that shines beautifully in your glass.

When creating this year’s Christmas drink, they took inspiration from the old tradition of placing half a sixpence into a pudding mix, the whole family would stir the pot at least once and whoever found the sixpence in their serving on Christmas Day would enjoy wealth and prosperity for the year ahead.

  1. Pour 30mls of your Christmas Pudding Gin into your glass.

  3. Then Sprinkle 1 Teaspoon of Cinnamon on top.

Sea Bass can be cooked in a variety of different ways, the only real limit is your imagination, whether you like the Sea Bass to be the only flavour hitting your palate or if you prefer to have a circus performing on your tongue, each palate is our own and needs to be catered to, so next time you feel like a piece of Sea Bass, consider cooking it with a Kiwi or if you don’t like Kiwi, try Mango, if you don’t like something sweet, add in chilli pepper or ginger.

This beautiful piece of Sea Bass was fried with 1 Kiwi, 1 Green Apple, 2 Garlic cloves, 2 Mint Leaves and a sprinkle of Herbs.

I then placed it all on a bed of white rice, as the Kiwi had been cooked with the Sea Bass, its sweetness levels had increased, meaning if we were to have a pleasant combination for lunch or dinner, we would need a balance between sweet and savoury, because sweet foods are more powerful on the palate than savoury, so to make sure the savoury flavours were not overpowered, I made sure we had two strong forces.

After creating such a delicious lunch for myself, I need to pair it with a Sparkling Wine that wouldn’t just work but enhance the whole tasting experience, so I looked into our Sea Breeze category, I landed on a previous trophy winner, No.1 Rosé.

No.1 Family Estate was born in 1977 by Adele & Daniel, they chose the name No.1 Family Estate in recognition of the many ‘firsts’ in New Zealand wine they had achieved over the years while working on their first venture, Cellier Le Brun.

They released their very first Cuvée No.1 on Bastille Day in 1999 and in 2012 their No.1 Assemblé was the first wine in New Zealand to be labelled ‘Méthode Marlborough’ in place of Méthode Traditionelle.

Aroma 👃 “Sea salt, raspberries minerals, wet stones, seashells and fresh from the beach seaweed on the aroma.”

Flavour 👅 “A vibrant expression of red berries mixed with wet stones, seashells and salty ocean air on the palate.”

This Sparkling Wine from New Zealand Won a Silver Medal in the Sea Breeze Category at the Glass of Bubbly Awards 2021

Wow! a perfect example of a Sea Breeze Sparkling Wine, all you need to do is close your eyes and take in the aromas of this Rosé and you find yourself standing on the beach, I can’t wait to pair this with the Sea Bass.

Paring Notes – “A fantastic infusion of salty, minerals and red berries, as soon the Sparkling Wine enters, the sweet kiwi flavours are enhanced, the mint holds firm a salty saline brings the savoury sea bass back to life on flavour allowing for a sweet and savoury finish.”

A truly wonderful pairing, everything worked, nothing overpowered, the Sparkling Wine added its own Sea Breeze character and enhanced some of the existing flavours from the dish, I am very pleased with how this food pairing turned out and I defiantly recommend that you give it a try.

Today, the 3rd of December 2021 is Elf Day, it was created by the Alzheimer’s Society with the aim to get everyone into the Christmas spirit as well as to raise money to help tackle dementia. They encourage you to dress up as much or as little as you want, it’s a brilliant idea, as Santa always welcomes a helping hand over this joyful season, because not everyone is always able to look forward to Christmas as much as they’d like.

With our Elf ears and hats on, it’s time to enjoy a glass of bubbly with the most loved and joyful workforce in the world.

Let’s start with some simple questions, It’s not often you’re sat in front of a real elf.

You: What kind of music do you like best?

Elf: Wrap music.

You: What was the first thing you learned at school?

Elf: The elf-abet.

You: Did Rudolph go to school?

Elf: No. He was Elf-taught.

Maybe we should pop open our first bottle of bubbly, this bottle has a very fitting green label to start us off, Motzenbacker, which won a Gold medal winner in the Oaky & Toasty category at the Glass of Bubbly Awards 2021.

Motzenbäcker has a history dating back to 1758, currently, 4 generations of the Menger-Krug family is helping in creating Motzenbäckers Sparkling Wines, they all have their own specialist fields and gift new ideas to their Wine & Sparkling Wine, they all reside in the wine estate Krug´scher Hof and Motzenbäcker.

Aroma 👃 “Green fruits, grassy, creamy petroleum, touch of toast on the nose.”

Flavour 👅 “Fresh and fruity, green fruits, added grass / nettles / lime flavours.”

Let’s open our second bottle, Lumiére – Delaware, a Sparkling Wine from Japan, which won a Silver Medal in the Topical Burst Category at the Glass of Bubbly Awards 2021.

Lumiére – Delaware 2019 – Tasting Notes

Founded by Tokugi Furiya in 1885, this Japanese winery is currently being run by Shigeki Kida, their 5th generation of winemakers. World famous for its quality Japanese wines, Lumiere is a winery located some 110 km from Tokyo to the west. All grapes are picked by hand and their sparkling wines are of the traditional method style.

Aroma 👃 “Tropical burst on the nose, banana, green fruits, pastry.”

Flavour 👅 “Dry and citrus style initially with dry tropical length.”

Elf: Do you want to know why the dyslexic elf got fired?

Elf: Because he kept writing “From Satan” on every present.

You: One final question, what would be your favourtie Cocktail?

Elf: That would be an ‘Elf on the Beach’.
