The delicacies of the ocean once again have made their way to the dinner plate, this time we’re pairing Scampi with a Spring Fling Sparkling Wine from Slovenia.

What is Scampi?

To put it simply, it is a lobster, it goes by different names, Dublin Bay Prawn, Norway Lobster, Scampi and its official name Nephrops norvegicus. It lives in the Mediterranean and northeastern Atlantic, from Iceland to Norway and down to North Africa. This type of lobster is slim in structure, orange to pink in colour and grows to 25cm/10inch long.

  • Peas
  • Mint

Pairing Notes – “An oily texture hugs the scampi, it enhances the Sparkling Wine’s flavours of apricot, peach and brings out green fruits, then leaving you with the scampi flavours at the end.”
