Virus 7 and a Hearty Meal

A healthy hearty meal with a vintage Slovenian Sparkling Wine is a pleasant way to spend an evening after a hard day of work either working on the vines, building a house or whatever it is that you do to earn a living. The sparkling wine I’m pairing with this dish is the Virus 7 Sparkling Wine from Vina Sosolič.

With a population of about 2 million people in Slovenia, they have over 10,000 beekeepers and approximately one vineyard for every 75 people in Slovenia, so there’s a lot of hard-working people who could benefit from a meal like this.

The Slovenian Sparkling Wine – Vina Sosolič

Covering 10 Hectares, Vina Sosolič makes Red Wines, White Wines and one bottle of Sparkling Wine, they say their most well know wines all bear a similar name, Virus, they have three bottles of wine with the Virus name, a bottle of Red Wine called Virus 3, a bottle of White Wine called Virus 5 and a bottle of Sparkling Wine called Virus 7.

Aroma – “Yellow & green fruit, floral and yeasty aromas.”

Flavour – “Citrus flavours including lime, yellow fruits and green apple skins on the palate.”

This Slovenian Sparkling Wine Won a Silver Medal in Gastronomic Category at The World’s Finest Glass of Bubbly Awards 2020.

The Dish

Creating a nice healthy dish that will fill you up becomes pretty easy when you learn how, for this fish dish I used Haddock and some Beans and Lentils, frying the fish and boiling the beans/lentils in different pots.

Ingredients

  • Haddock
  • Black Beans
  • Green Lentils
  • Yellow Lentils

Pairing Notes – “The Sparkling Wine adds a welcomed light yellow citrus and yellow fruit flavour, it’s a soft addition that adds lots of flavours allowing both the Sparkling Wine and dish to become more fruity.”

This dish will fill you up and it’s nice to know that the dish is healthy for you, using only natural ingredients.
