The Sparkling Wine – Fink & Kotzian
The land that grew the grapes that made this bottle once belonged to Rudi Neuhold, he had wanted his daughter to carry on the winemaking trade, but she wished to go on a different journey, the current owner was working in the vineyard at the time and one day in 2013 was offered the vineyards by Rudi, he accepted and Fink & Kotzian was born.
Fink & Kotzian have a respect for tradition and care for the environment, the family Petra, Leopold and Christian create their Sparkling Wines inside a small cellar carved out of a hill, with their vineyards 6 to 10 meters above them.
When it comes to the label, you might be wondering what it is or means, they get asked a lot what it means as it is an interesting piece of art, some ask is it a fingerprint, a tree ring or in my case a gateway way to another dimension like in the film Coraline, but the truth of the matter is, they don’t even know, and that’s the way they want it, they didn’t even ask the artist what it meant, they want it left up to interpretation, so it could very well be a fingerprint if that’s how you see it, it’s up to you to decide what it means to you, that’s the beauty of this label, which was created by Claus Hugo Nielsen.

Pairing Notes – “The Sparkling Wine brings out the salmon and cheese flavour and adds a subtle yellow citrus touch, The combination brings out a sweet character from the wine, an apple character is added, but it dissolves quickly to add fresh clean flavours of the salad, the wine clears the fat from the cheese and oil from the fish and meat.”
