Couscous and Fizz

Sparkling Wine is always great to accompany a meal, you can make a living pairing food and wine together and over the years I’ve become pretty good at it.

I’ve been enjoying some healthy meals recently and thought that pairing a bottle of Sparkling Wine with some Couscous would be a good idea, so let’s have a look at how well the two work together.

The Sparkling Wine – VIN.CO

VIN.CO is made in Abruzzo, Italy, their goal is to bottle 5% of the total sparkling wines produced in Abruzzo in less than 5 years.

VIN.CO Abruzzi Spumante DOP Brut DOC Tasting Notes

Aroma – “White and green pear, candy pears, green salad, creamy cheese and hints of floral aromas.”

Flavour – “Very smooth green fruits, creaminess and lime zest on the palate.”

This Spumante Won a Silver Medal in the Gastronomic Category at The World’s Finest Glass of Bubbly Awards 2020.

The Couscous

Ingredients

  • Roasted Vegetable Couscous (Tomato, Onion, Peppers, Hint of Garlic)
  • Tomato
  • Cucumber
  • Blueberries

How To Make The Couscous

  1. Pour the Couscous into your bowl
  2. Add 100mls of water
  3. Wait 5 minutes
  4. Then stir and serve in your place or keep in your bowl
  5. For extra charm, cut up some tomato and cucumber into slices and present them on top along with a couple of blueberries.

Pairing Tasting Notes

Flavour – “Because of the smoothness of the Sparkling Wine, it doesn’t clash or overpower the Couscous, instead, it carefully helps the dish, it gives the dryer style dish some fizziness adding in a sharp burst of green & yellow fruits then leaves the fading Sparkling Wine flavours to accompany the dish.”
