Sommelier’s Favourite Sparkling Wine Food Pairings
11th December 2015
Pairing Champagne and sparkling wine with food is versatile and doesn’t have strict rules, so we always love to hear new combinations. When interviewing Sommelier’s, one question we tend to ask is “Do you have a particular favourite sparkling wine food pairing?” Here’s a few of the answers we’ve had so far…
Arnaud Bardary – Sommelier at Maze by Gordon Ramsay London
“Besserat de Bellefon extra brut NV to match with a dumpling of lobster tiger prawns, salmon and lemon grass broth. The freshness and elegance of the Champagne cut through perfectly with this dish.”
Christina Francescon – Freelance Sommelier
“To keep it simple (and delicious!), San Daniele raw ham and Prosecco (either DOC or DOCG); with its top category Cartizze too from Glera / Prosecco grape!”
Christopher P. Bates – Sommelier at F.L.X. Wienery & Element Winery
“Mushroom quiche and Krug”
Emily Harman – Sommelier at VinaLupa
“Champagne and hard cheeses, such as mature Comte, aged parmesan. It’s such a refreshing way to finish a meal!”
Harley Carbery – Sommelier at Mandalay Bay Resort and Casino & Delano Las Vegas
“Champagne and salt and vinegar chips! A bright, fresh Champagne goes great with the salty, sour notes of the chips.”
Ian Cha – Vino Rapport, CEO/Sommelier, Seoul, South Korea.
“Fresh Carprese salad with Franciacorta rosé.”
