Jim and Tonic recently sent through a survival kit featuring a Rhubarb Gin and over a dozen mini bottles of Ginger Ale, Lemonade and Tonic Waters, so I decided to grab a bottle of Italian Sparkling Wine and create a few cocktails to survive the weekend.

The Sparkling Wine – Riva Dei Frati
‘Riva dei Frati owes its name to the place where the vineyards were located: an abbey forgotten by time and a steep slope. A ‘shore’ particularly suited to viticulture, exposed to the wind and sunny, where the grapes of the truest Prosecco refine their scent.’
Knowing the history or meaning behind certain parts of a winery or wines name gives the whole experience a grander sense and a more enjoyable experience because now I have an image in my mind of a forgotten abbey on the gorgeous landscape of Italy, so beautiful that no pictures could ever capture.
Riva Dei Frati grow their vines between 50 and 500 meters above sea level, they also have an approximate 1200 metres square basement with tanks that have a total capacity of 2,000 hectoliters. They use ancient secrets combined with modern technologies to develop their Sparkling Wines.

The Italian Roobee Cocktail
Ingredients
- Rhubarb Gin
- Sparkling Wine
- Mint leaves
- Crushed ice
How To Make The Italian Roobee Cocktail
- Place some ice or crushed ice into your glass.
- While adding in the ice, place in 5-6 mint leaves.
- Pour in 15mls of Rhubarb Gin.
- Add in 100mls of Sparkling Wine to finish.

Aroma – “Fresh mint, with a hint of red berries and rhubarb on the aroma.”
Flavour – “Rhubarb leads with subtle red berries and garden herbs, the gin still packs a punch, you’re left with refreshing rhubarb flavours.”

- Lemonade
- Sparkling Wine
- Crushed ice
How To Make The Riva’nade Cocktail
- Place some ice or crushed ice into your glass.
- Pour in 100mls of Lemonade
- Top up with 100mls of Sparkling Wine

The Ginger Monkey Cocktail
Ingredients
- Ginger Ale
- Sparkling Wine
- Crushed ice
How To Make The Ginger Monkey Cocktail
- Place some ice or crushed ice into your glass.
- Pour in 75mls of Ginger Ale
- Top up with 75mls of Sparkling Wine
